SUCCESS!
I've finally succeeded. I've been trying since last year! No...not to finish a book in one day..... No... not to finally have a good paying job on my side of the bay.... BUT to be able to cook PORK ADOBO and taste GOOD!!!!
WOO HOO!!! This just happend 30 minutes ago!
I'm so excited! I used my cousin's recipe for her chicken, which worked for me as well, but used pork. And as you may know, when substituting the main ingredient, it doesn't always taste the same. You sometimes have to tweak it a bit. I've been trying to cook this dish and in the end, it would either be too tough, too salty or to sour.... So what did I do different?
Well here are the ingredients that I used:
1 1/2 pounds of pork butt slightly cubed into bite size pieces 3/4 of a medium yellow onion 1/2 a garlic blub crushed and slightly chopped 1 tsp minced ginger from a jar (you can use fresh ginger sliced or chopped) 1/2 cup of soy sauce 1/2 cup of vinegar 1/4- 1/2 cup of water 1-3 tbsp of sugar Knorr Seasoning ground black pepper 2 bay leaves oil
Heat your pan with oil and saute your garlic, ginger and onions 2-3 min or until slightly browned. Add the pork and brown slightly on each side Add vinegar, soy sauce, and bay leaves Water, sugar, Knorr Seasoning, and pepper to your taste Simmer for 30-45 min until sauce is reduced. As you know...it's to your liking, so you may want to cut stuff or add more... This meal makes about 2-3 servings.
I was told that pork butt was more tender and of course the secret ingredient to most Filipino dishes is SUGAR! I also sauteed the garlic, onions and ginger first before adding in the main ingredient. If you have your own rendition, please share...I'd love to try it out! YUM!!!!
